Creamy Blueberry Walnut Vinegrette
In your food processor or blender pour:
3/4 cup of Vanilla Silk (soy milk) -I have severe allergy to cow's milk and Silk has NO Cholesterol! 2 tsp of soy lecithin (emulsifier, it helps the oil and vinegar to stay blended, tastes creamy, AND it LOWERS your cholesterol, soothes the pms,calms your edgy nerves, cools hot flashes and prevents breast cancer!)
Then add
two teaspoons of soy lecithin granules into the milk to soak/soften up for 20 minutes,
1/2 cup toasted walnuts (these lower the cholesterol too, rich in omegas) 2 Table spoons of honey, or other sweetener. NO high fructose Corn syrup!
In a seperate measuring cup pour:
1/4 cup apple cider vinegar,(great for increasing energy, full of EDTA - a powerful amino acid that clears the arteries, capilaries and helps the heart, brain and circulation of all the vital organs!)
and 3/4 cup canola oil or olive oil
1 Tsp of dried Basil (Basil fights cancer, returns body's PH levels to alkaline for increased resistance to disease, and it's high in antioxidants. Take up chewin this an you'll never be sick!!!)
1 tsp dried Oregano (Oregano kills yeasts,balances digestion,& also clears tickly itchy sneazzy's away!)
By now you may add the 1 Cup of Blueberries (ranking highest in antioxidant powers) to your blender, then add the measuring cup of Apple Cider vinegar/Oil/herb mixture to the blender. Buzz up until the walnuts and blueberries are pureed to no recognition. It should be looking like purple smoothie, tasting like blueberry salad dressing. If this is too tart, add one more T of Honey. **Stevia should be substituted VERY SPARINGLY All of the ingredients here are designed to help your body in some way, but it is a positive way and very powerful. It may have a laxitive effect if used excessively, and it is a very tasty dressing so take it easy when you use this. ****Do not use soy if you have allergies to soy.
I zipped this up in my food processor and poured it by funnel right into my empty olive oil bottle. It takes a good shaking up, but stays pretty well blended a good while because of the soy lecithin.
Okay, this is my responsibility report this week. I am drinking 90 oz of water each day... or close to it.
I walked my doggie (he so loves me now) THREE miles last week, and hope to repeat that this week.
Since I talked to my cardiologist last Oct., my stress levels MUST get lowered at every chance I can, so I am trying to dance to the radio more ...even though my son groans about it.
I have switched to a vitamin/herb/mineral suppliment that is mostly what I was taking before - but in 4 different pills. Wheew, fewer to swallow is a load of stress off my day. It is balanced and also helps to reduce the stress hormone Cortisol, which causes you to store belly fat and raises your cholesterol. Who needs cortisol anyway? NOT ME! This has really raised my energy and makes me sleep so sound... like a baby. I so wish they had this stuff back when the kids were born, maybe I would have enjoyed more of my time back then. Weigh in: I weighed in at 173 this morning, down from last week's tear bursting 178... but also back to my same weight at Christmas. I wear a size 13-14 right now, but a size 10... or an 8 would be nice by my 25th class reunion next year. My next week goal is to be 170 for certain.
I am working out at Curves this week. Today was my first day on a free "try us for a week coupon". It felt really good to get my heart rate up, but not racing out of rhythm, under close watch. Thank goodness that there are places like this. I'd like to join, but darn I just really need the full time teaching position to afford the $29/mo automatic check drawn out of my account. I may check out the local Community Center. They have a family membership option and a pool. My son is loving the weight lifting at school so he could do that too. It would be so nice to get a monetary break from being a substitute teacher in this district on the Community Center membership...I don't know if they do that. It sure would be good.
My cousin here has bitten me with the waterbug already. I remember her as a small child, begging to go swimming in our pool when it was only 45-55 degrees outside. Sure-I was ready to go...but nobody would take the cover off. Hmmph! Parents!
